Pea and bacon risotto

This is the second post I’ve written about risotto. The mushroom risotto I posted before was fantastic and I wanted to do another one to show how easy it is to take the standard risotto technique and adapt it for different flavours.

I’ve always got half packets of bacon in the freezer and almost always have a packet of frozen peas as well so this was a simple, quick and cheap meal that will easily feed four people or two over a few days (I’ve just finished the leftovers for lunch as I type this). Masterchef is about to start a new series so in homage to the show I cooked up a dish that always seems to make an appearance on some contestant’s plate, scallops with pea purée. If you’re in a hurry but don’t fancy beans on toast, or something that goes ping, then spaghetti can provide a brilliant quick and easy meal. This dish is one of my favourites and uses a classic combination of anchovies, olives and capers that shows its face over and over in Italian cooking, especially in the south. Quick lunch – mackerel, courgette and tomatoes on toast

Sundays can be maddening. They’re made for not doing much but invariably end up with the pre-monday rush of boring chores like ironing work clothes, doing the weekly shop and cleaning the house. I’d much rather spend the day sitting in the garden (on the rare occasion when sunshine occurs at the weekend), drinking a few beers and generally doing as little as possible. Because I was feeling a bit lazy today and didn’t want to go get lunch from the supermarket I knocked up this quick fishy feed instead. Egg with Anchovy Soldiers

Today I’m at home and feeling a bit under the weather, but also hungry. I didn’t feel like going to the shop which meant the only option was to hunt in the cupboards for something edible. Skipping past a packet of super noodles (green thai flavour) and the jars of pasta sauce (not worth opening for a light lunch) I eventually dug out some eggs and a tin of anchovies. 5 minutes, a hot pan of water and some toast later and lunch was done.
