Egg with Anchovy Soldiers

Today I’m at home and feeling a bit under the weather, but also hungry. I didn’t feel like going to the shop which meant the only option was to hunt in the cupboards for something edible. Skipping past a packet of super noodles (green thai flavour) and the jars of pasta sauce (not worth opening for a light lunch) I eventually dug out some eggs and a tin of anchovies. 5 minutes, a hot pan of water and some toast later and lunch was done. I felt a lot better after eating it as well!

Serves 1

small tin of anchovies
2 medium eggs
some toast (buttered if you like)

Boil the eggs as per your normal preference.
Cut the toast into thin strips and place an anchovie on each soldier.
Dip the soldier into the yolk/spoon the egg onto the soldier and enjoy!
