Pea and bacon risotto

This is the second post I’ve written about risotto. The mushroom risotto I posted before was fantastic and I wanted to do another one to show how easy it is to take the standard risotto technique and adapt it for different flavours.

I’ve always got half packets of bacon in the freezer and almost always have a packet of frozen peas as well so this was a simple, quick and cheap meal that will easily feed four people or two over a few days (I’ve just finished the leftovers for lunch as I type this). Scallops, pea puree and sweet potato crisps

Masterchef is about to start a new series so in homage to the show I cooked up a dish that always seems to make an appearance on some contestant’s plate, scallops with pea purée. I could have just served them with peas and mash but I’m quite conscious that I’ve blogged a lot of dishes served with peas and mash recently! Prawn and chorizo paella

I’m a big fan of paella and we often make the trip to the international market when it visits especially to get a portion for lunch. Unfortunately the market is getting hugely overpriced in the current economic climate so I thought I’d try making my own and save us an expensive trip in the future.

After checking a few recipes online and a quick detour to the supermarket on the way home I got down to work. The end result was perfect. Exactly what I was hoping it would be. Tasted exactly the same as the overpriced paella from the market at a fraction of the price and it only took half an hour to make. Definitely one to make again.
