Tom Kitchin’s Saffron Poached Monkfish

I haven’t sat down and looked through my recipe books for something nice to make for a wee while. Instead I’ve stuck to well-worn recipes I know in my head or referring to dishes I’ve already blogged in the past. Having a flex day to use up meant I had a bit of time to pick something a bit special to cook.

Browsing through the weighty tomes that lurk in my kitchen I ended up flicking through Tom Kitchin’s excellent Kitchin Suppers and this fantastic looking poached monkfish dish with saffron , broad beans and peas. Video Blog! Prawn and Chorizo Paella

I thought I’d do something special to mark the 1st birthday of the blog this month. Here’s the first video blog on the site! I’m cooking paella for this as it was one of the first recipes I posted on the blog back in August 2010.

It’s strange watching yourself on video. It’s also hard to edit! I seem to stir things a lot… must have cut out about 10 minutes of footage which was just me stirring a pan. The paella isn’t completely authentic (no carmelised bottom layer of rice and onions for example) but it’s delicious and really easy.

Prawn and chorizo paella

I’m a big fan of paella and we often make the trip to the international market when it visits especially to get a portion for lunch. Unfortunately the market is getting hugely overpriced in the current economic climate so I thought I’d try making my own and save us an expensive trip in the future.

After checking a few recipes online and a quick detour to the supermarket on the way home I got down to work. The end result was perfect. Exactly what I was hoping it would be. Tasted exactly the same as the overpriced paella from the market at a fraction of the price and it only took half an hour to make. Definitely one to make again.
