Veal Milanese

Every now and then I like to try and replicate a favourite restaurant dish. This time round it’s the turn of that Italian restaurant classic – veal milanese. I’m a big fan of veal – low in fat, high welfare (if bought from the UK) and it tastes great.

This dish is pretty simple. Blitz up some herby breadcrumbs, coat and cook the veal then leave somewhere warm while you cook the pasta with some sage and tomatoes. Sea Bass with Tomato and Olive Spaghetti

What am I going to have for tea tonight? That’s a question that takes up a lot of my time. For inspiration I’ll grab a few books and flick through them or trawl recipe websites hoping something jumps out of the screen. But often the best inspiration is my own memory of a dish I’ve eaten somewhere. This sea bass dish is my version of a restaurant dish I had at Sea Breezes on Skye. Rosemary meatballs in tomato sauce

I set aside a load of time yesterday for my first attempt at making my own beef stock. Unfortunately my plan was scuppered by Morrison’s not having any bones left (they had some in the morning apparently) and the butchers being closed due to illness. I had the time to spare so it would be a shame not to spend it cooking something. We have a flourishing rosemary bush in the garden and there was some good mince on the shelf in front of me which made think that meatballs would be a good idea. A while ago we were given a present of some venison lorne sausage. Normally I’d try to avoid the square sausage as an evil weegie creation that most people should avoid at all costs. Spaghetti with olives, anchovies and capers

If you’re in a hurry but don’t fancy beans on toast, or something that goes ping, then spaghetti can provide a brilliant quick and easy meal. This dish is one of my favourites and uses a classic combination of anchovies, olives and capers that shows its face over and over in Italian cooking, especially in the south. Haven’t done much serious cooking again this week due to training and the Scotland game on Tuesday. The braised lamb shank on Sunday more than made up for it though, it tasted amazing.
