Garlic and rosemary lamb chops

I know this is very similar to another post I made recently, but I don’t care. This version is massive improvement.

Last time I just threw some rosemary at thyme at the gravy after pan-frying the chops and hoped I’d get a superb meal at the end of it. That tactic almost worked but there was definitely room for improvement. This time I decided I needed more firepower. The small arms fire of rosemary and thyme are all very good but they need some heavy weapons backing them up. I reached for garlic, anchovies and a roasting tin. Lamb Chops in Rosemary Gravy

Ah lamb. I love lamb. Tragically, I don’t get to eat nearly enough of it but a recent knee injury has resulted in a couple of my evenings being freed from the iron grip of training. So instead of beans on toast twice a week, I’ve got more time to do something a bit more substantial.

Pan fried gammon with cider sauce

It’s Friday night and due to a snap decision at lunchtime (my girlfriend was going to the supermarket and asked what I wanted for tea tonight) we’re having gammon. So the next thing that popped into my head was a memory of something I saw while flicking through a recipe book. Continue reading “Pan fried gammon with cider sauce”

Braised lamb shank

I really, really love lamb. In terms of favourite foods it’s right up there, shining bright at number 1 on my list. Chops are great and roast leg of lamb is wonderful but I absolutely love braised lamb shank. It’s slow, patient cooking that has such a deep reward of the strong lamb. Tender and moist from being bathed in a lot of red wine for 2 or 3 hours. The flesh just falls off the bone and the gravy… oh the gravy! Continue reading “Braised lamb shank”

Lemon and herb crusted sea bass

There was a Scotland game on tonight (0-0 against Lithuania, good performance but we should’ve won) so I needed something quick for dinner before the game. Quick, relatively easy but also fancying something I hadn’t cooked before my thoughts started turning towards fish. Continue reading “Lemon and herb crusted sea bass”
