Steamed and braised haddock with colcannon

It’s been a while since I chose a recipe out of a book and then set out to buy the necessary ingredients and follow it as closely as possible. Post-Christmas, having received a few books as presents it’s time to break out of the making it up as I go along groove I”ve been in lately.

The excellent River Cottage Fish book is the one I decided would supply tonight’s dinner and I settled on a recipe for steamed/braised ling. Because Tesco’s is shit and it didn’t have any of the white fish Hugh recommended I decided to go for haddock. It was either that or Vietnamese cobbler. Pheasant with caramelised apples

It’s farmers market day! Woo! We headed down to the monthly farmer’s market on the hunt for something tasty for tea. Despite getting sidetracked by a pork pie and some free sausage samples we eventually completed our mission and returned home with a pack of pheasant breasts and a few pigeon breasts (to be blogged another day). Braised lamb shank

I really, really love lamb. In terms of favourite foods it’s right up there, shining bright at number 1 on my list. Chops are great and roast leg of lamb is wonderful but I absolutely love braised lamb shank. It’s slow, patient cooking that has such a deep reward of the strong lamb. Tender and moist from being bathed in a lot of red wine for 2 or 3 hours. The flesh just falls off the bone and the gravy… oh the gravy! Continue reading “Braised lamb shank”
