Friday night beef

Who says a roast is just for Sundays? Keep things simple and you can fit it in any night of the week. Roast beef, onions, butternut squash and new tatties tastes pretty good with a large glass bottle of wine on a Friday night.

Pigeon with Roast Beetroot

My fiance loves pickled beetroot. She’ll munch through jars of the stuff as a snack but I’ve never been all that fussed by it. It’s too overpowering and annihilates whatever is unfortunate enough to share a plate with it. That’s not to say I don’t like beetroot. It’s the second best root vegetable in the packets of root veg crisps you can buy these days (obviously parsnip is the best) and I’ve had some pretty good beet experiences in the past.

Recently I’ve noticed roast beetroot appearing on cooking programmes and menus more often. I picked up some pigeon breasts at the farmers market and decided it would be a good time to try roasting beets. Continue reading “Pigeon with Roast Beetroot”

Roast Lamb with Lentils

I made this lamb dish a few weeks ago as a midweek meal then forgot to write down what I did. Now I can’t remember precisely enough to type it up properly! It was bloody delicious though. Roast lamb shoulder on a bed of puy lentils with pancetta, onion and cumin. I roasted the lamb with some garlic and rosemary. Then boiled the lentils according to the packet, drained them then chucked them into a frying pan with some onion that I fried until just brown and some crispy pancetta pieces. I seasoned the whole lot quite heavily and also added some cumin for flavour.

To be honest it probably doesn’t need a precisely measured recipe. It’s simple and tasted amazing.

Roast Rabbit With Bacon

I’m always a happy bunny when the guy from Mortlach Game appears at the farmer’s market with some rabbits. I don’t understand why we rarely see them in supermarkets and butcher shops in the UK. When we were in France in the summer the meat counter had a lovely display of rabbits, skinned and laid out front and centre of the cabinet. You never see that over here. Instead in the heart of one of the most important game regions in Scotland our local Tesco only has chicken, beef, lamb and pork. Great.

Anyway here’s yet another Stephane Reynaud inspired recipe. Continue reading “Roast Rabbit With Bacon”

Roast cod with parma ham

What a couple of weeks its been. Redundancy, leaving nights out (or day as it turned out) and then starting a new job have meant the last wee while’s been pretty chaotic. Still things are calming down now and a week of sunny weather put me in the mood for some sunny food on Friday.

When I first started cooking one of the first things I made for other people was roast cod wrapped in parma ham. It was from a fantastic cheap book full of about 400 recipes using only 3 or 4 ingredients (store cupboard essentials not included). As a learning resource this book was fantastic for a lazy fat man getting started with proper cooking. It taught me basic techniques, what foods work together etc. Now I’m further along my culinary journey I dusted down the book to try an old favourite again. Continue reading “Roast cod with parma ham”
