Toad In The Hole

It’s time for a classic – Toad In The Hole. I haven’t made this for ages. No idea why as it’s all kinds of awesome. Massive yorkshire pudding with plump sausages and loads of gravy. Yum!

The Devenick Dairy were doing a deal on veal sausages at the farmers market recently so I thought they’d be a perfect match for some toad in the hole. Once defrosted it looked like there was a few more sausages in the pack than we initially thought but I cooked them all anyway and ate the rest after my run the next day. Pheasant in a cream sauce

With a month to go until the City of Aberdeen Bakery Hughes 10k I’m out running most evenings to get the miles under my belt. I’m determined to try to get a 10k time below 50 mins this year so I’m aiming for sub 55 minutes next month. Quick and easy smoked mackerel pate

After 2 months of sitting on my backside due to a knee injury and the arrival of all that white stuff on the ground I decided last night to get back in the game. So as soon as I got home it was into the track suit and I cleared some space in the spare room for the little rowing machine we’ve got (still too much snow in Banchory for me to brave running). But before I got stuck in I needed to decide on what to eat for tea afterwards. It needed to be something I can prepare quickly, preferably beforehand and leave it while I do my session and is quite light as the last thing I want after exercise is a big meal.

I always see smoked mackerel fillets in the supermarket, but aside from fish cakes never really thought of anything to do with them. They’re delicious on their own of course, with a very sweet flavour and I could happily eat a whole packet for dinner (would be good sprinkled with lemon juice with some new tatties and some spring onions I think). Spaghetti with olives, anchovies and capers

If you’re in a hurry but don’t fancy beans on toast, or something that goes ping, then spaghetti can provide a brilliant quick and easy meal. This dish is one of my favourites and uses a classic combination of anchovies, olives and capers that shows its face over and over in Italian cooking, especially in the south. Pan fried gammon with cider sauce

It’s Friday night and due to a snap decision at lunchtime (my girlfriend was going to the supermarket and asked what I wanted for tea tonight) we’re having gammon. All morning I’d been thinking about pizza but decided to put that off until later in the weekend, especially as we’re going out for dinner tomorrow and pizza is a distinct possibility then.
