Pasta with spinach, sage and bacon

After the pork dish earlier in the week I had some spinach and bacon needing used up so I thought a quick pasta dish would do the job perfectly.

Due to it’s quickly botched together nature I don’t have any accurate measurements, but to be honest this sort of dish shouldn’t be exact. Add more of what you like and take out what you don’t, you’re the one that has to eat it after all.

Serves 2

Olive oil
Streaky bacon
Spinach
Chopped sage
Pasta shapes
Salt and pepper
Chopped parsley

Slice the bacon into lardons, heat a large frying pan and add a little olive oil then brown the bacon.
While the bacon’s boiling get a pot of salted water on the boil for the pasta.
Put the bacon pan to one side off the heat and add enough pasta for 2 people into the pot of water.
When the pasta is almost ready put the bacon back on the heat, add the sage and spinach and gently stir it round until the spinach is wilted.
Splash a spoonful or two of the water from the pasta pot into the frying pan, then drain the pasta and add it into the pan as well.
Take the pan off the heat, add the parsley, season with pepper, stir and serve.
